When I make the change
string hello = "Hello Xamarin in Action";
it works in the Android version just fine, but it is still displaying "Hello MvvMCross" in the iOS version.

It appears that the iOS version isn't picking up the change in the .Core project and is still linking in the old version.

I've googled this and can't really find anything that's helpful.

So, any insight about resolving this issue would be appreciated.

Oh, I'm using Visual Studio Community 2017 for Mac.

Well, I exited out of VS Mac and tried it again and it worked.

Glad you got it working. Sometimes the build doesn't rebuild everything correctly, so a good trick if things seem weird is to delete the app from your device/simulator, then rebuild all.
