Can the LSTM chapter discuss a multi-class, multi-label classification example?

Sort-of. All Keras classification neural networks shown in the book have the `predict_classes` method which outputs the probabilities of each class. So you can use these probabilities to assign the classes that meet whatever requirements you have for the class label accuracy.
