This section says it is about "support running the same assembly but different versions side-by-side". This seems to imply that one can install the new version of the solution without retracting the old version (so that the two assemblies are "side-by-side"). But actually you get an error when you try to add the new version of the solution to the Farm's Solution store telling you that a solution with that same name is already in the solution store.

What exactly are the steps for getting the two versions running "side-by-side"?

this refers more to . NET Fx in general, which supports side-by-side assemblies. You can have the same assembly with different versions registered in the GAC at the same time. If you would like to do it in SP you need to either register it in the GAC manually or create WSP files with different names and solutions id's but using the same assembly, since you cant have farm solutions running side-by-side.
I'll think of a better way to explain it.
